While I applaud the fact that science and reason are being applied to the food we eat, I also find it frustrating when "journalists" try to summarize studies into talking points.

The following paragraph appeared here in an article titled Probiotics Are Useless, GMOs Are Fine and Gluten Is Necessary:

The gluten-free fad was the next target, thanks to a paper published in The Journal of Pediatrics by Dr. Norelle Rizkalla Reilly, a gastroenterologist and Celiac expert at Columbia University. Reilly fact checked a number of beliefs about the benefits of a gluten-free diet. Unless you have a wheat allergy, Celiac disease, or a gluten sensitivity (as diagnosed by your doctor, not Google) avoiding gluten could actually be damaging to your health, the paper notes. It could leave you deficient in certain vitamins and nutrients, and may even overexpose you to toxins like arsenic (which is often absorbed from the soil by rice, the primary substitute used in gluten-free products).

At best this paragraph is intellectually lazy, at worst it's intellectually dishonest. To claim, as the writer does that avoiding gluten could actually be damaging to your health is patently ridiculous. There are zero, I repeat zero vitamins and nutrients present in bread that are not also present in real food (fruits, vegetables, meat). So to claim that removing gluten from one's diet could lead to deficiencies in said vitamins and minerals is absolutely without merit.

Further, to claim that eating rice (which is present in gluten-free products) may overexpose one to arsenic is simply a scare tactic. Not to mention the fact that the article assumes the only way to eat a gluten free diet is to substitute highly processed gluten free products for the traditional ones being replaced.

In reality, the easiest, best, and most beneficial way to remove gluten from ones diet is to simply stop eating the things with gluten in them. There's literally no need to try to find a gluten free substitute for spaghetti, just don't eat spaghetti. You don't have to buy gluten free bread, just don't eat bread.
